Cooked Light Raspberry Jam - CERTO Light Crystals

  1. Crush raspberries, one layer at a time.
  2. Sieve half the pulp to remove seeds, if desired.
  3. Measure exactly 6 cups prepared raspberries into large saucepan.
  4. Combine pectin crystals and 1/4 cup sugar; stir into prepared fruit.
  5. Bring to boil on high heat.
  6. Stir in remaining sugar.
  7. Return to boil; cook 1 min.
  8. Remove from heat.
  9. Stir and skim 5 min.
  10. to prevent fruit from floating to surface.
  11. Pour into warm sterilized jars, filling up to 1/4 inch from rims.
  12. Cover with lids.
  13. Let stand at room temperature 24 hours or until set.
