Cottage Cheese & Fruit Salad
- 6 cups chopped romaine lettuce
- 2 cups BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 4 kiwi, sliced
- 2 cups sliced fresh strawberries
- 1 cantaloupe, cubed
- 1 cup pineapple chunks, canned in juice
- 1/2 cup golden raisins
- 4 tsp. PLANTERS Walnuts, chopped
- 4 small whole wheat dinner s
- 4 tsp. trans fat free canola-based soft margarine
- 32 fl oz (4 cups) drinking water
- Arrange lettuce evenly onto 4 plates.
- Top each with 1/2 cup cottage cheese, 1 kiwi, 1/2 cup strawberries, 1/4 of the melon and 1/4 cup pineapple.
- Sprinkle each with 2 Tbsp.
- raisins and 1 tsp.
- walnuts.
- Complement each salad with a roll spread with 1 tsp.
- margarine.
- Serve each person an 8 fl oz glass of water with their salad.
