Lisa's Ratatouille
- 2 medium Bell Peppers
- 1 can Chopped Tomatoes
- 1 small Zucchini
- 1 medium Onion
- 250 grams Mushrooms
- 400 grams Chicken Breast
- 10 Black Olives
- 2 clove Garlic (optional)
- 1 tbsp Olive Oil
- 1 tsp Basil
- 1 tsp Chili
- 20 ml Citrus Juice
- 2 tsp Honey
- 1 tsp Pepper (to taste)
- 1 tsp Salt (to taste)
- Chop onion and garlic and heat it in a large skillet with olive oil.
- Chop all vegetables except olives and add them to the skillet.
- Add chopped tomatoes, salt, pepper, basil, chili, juice and honey.
- Chop chicken and olives, add both to the skillet.
- Heat until chicken is done, meanwhile check the taste of the sauce and add more seasoning if you like.
