Bourbon Nut Bread
- 8 eggs, separated
- 1 lb butter
- 13 cup Bourbon
- 3 cups sugar
- 3 cups flour
- 2 teaspoons vanilla extract
- 2 teaspoons almond extract
- 1 cup pecans, chopped
- Whip egg whites until stiff.
- Add 1 cup sugar: set aside.
- Cream butter and rest of sugar until light yellow.
- Add egg yolks one at a time.
- Alternately add flour, bourbon, vanilla and almond extracts.
- Beat well.
- Stir in nuts.
- Fold in egg whites until smooth.
- Divide batter into 3 greased loaf pans.
- Bake at 325 for 1 - 1 1/2 hours until done.
- Freezes well.
