Buttermilk Cake

  1. Grease and flour a 9-by-13-inch pan.
  2. Heat oven to 350 degrees.
  3. Beat butter with sugar until light and fluffy.
  4. Beat in egg yolks, one at a time.
  5. Sift cake flour with cream of tartar and baking soda.
  6. Beat into batter alternately with buttermilk in several additions.
  7. Fold in egg whites.
  8. Pour batter into prepared pan.
  9. Bake about 50 minutes, until cake tests done.
  10. Stir together topping ingredients.
  11. Remove finished cake from oven, spread with topping and place under broiler, 3 inches from heat, until bubbly and caramelized, 1 to 2 minutes.
