South Beach Breakfast Quiche To Go

  1. Microwave the spinach for 2 1/2 minutes on high(or you can use steamer).
  2. Drain the excess liquid.
  3. Coat a 12-cup muffin pan with cooking spray.
  4. Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl.
  5. Mix well.
  6. Divide evenly among the muffin cups.
  7. Bake at 350F (180C) F for 20 minutes, or until a knife inserted in the center comes out clean.
  8. Lightly cool on a wire rack, serve warm.
