Butternut Squash and Ginger Relish

  1. Stir together vinegar, sugar, and salt in a large bowl until sugar and salt are dissolved, then add remaining ingredients and toss well.
  2. Chill relish, covered, tossing occasionally, at least 2 hours (to allow flavors to develop) and up to 2 days.
