Creamy Cheddar Soup

  1. In a saucepan, saute onion and pimentos in butter for 5 to 7 minutes.
  2. Blend in flour.
  3. Add stock and cream.
  4. Cook until thick.
  5. Add cheese and stir until melted.
  6. Add 1/4 cup green onions, salt and pepper, to taste, and cayenne if desired.
  7. Garnish with remaining green onions.
