Christine's Baked Cheesy Potatoes and Chorizo

  1. Heat oven to 350F.
  2. Grease a cake pan.
  3. Add the potatoes, then squeeze the chorizo out of the casting and break into bite size clumps.
  4. (This must be moist like sausage).
  5. Fold together till combined.
  6. Bake for 1/2 hour then fold again mixing to coat the potatoes and breaking up the pieces of chorizo.
  7. Return to the oven and bake another 1/2 hour.
  8. After baking remove from the oven and sprinkle with cheese and fold until completely melted.
