Zucchini Pie Casserole
- 3 cups thin sliced zucchini
- 1 cup Bisquick or 1 cup basic Bisquick baking mix
- 12 cup chopped onion
- 12 cup parmesan cheese, grated dry type will do
- 1 teaspoon salt, to taste
- 12 tsp.black pepper
- 12 cup oil
- 4 eggs, slightly beaten
- tsp.fresh parsley
- Mix all ingredients.
- Place in an oiled casserole dish or pie pan.
- Bake 30 minute at 350 deg.
- Serve hot or cold.
- You may choose to add extra grated cheese.
