Tuna Patties
- 2 cans tuna drained, finely flaked
- 1 cup bread crumbs soft
- 1/2 cup celery chopped
- 1/4 cup scallions, spring or green onions chopped
- 3 each eggs well beaten
- 4 tablespoons vegetable shortening
- 2 tablespoons scallions, spring or green onions chopped
- 1 tablespoon butter
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- Mix ingredients, except shortening, together and form into patties.
- Melt shortening in heavy skillet and saute the patties until golden brown.
- Drain on absorbent paper.
- Serve hot with sauce or chill for several hours or overnight and serve cold with sour cream sauce.
