Peach Jelly Made with Peach Compote

  1. Make peach compote..
  2. Quarter the peach.
  3. Soak gelatin in 2 tablespoons of water.
  4. Heat the compote syrup in a pot until just before boiling.
  5. Add and melt the gelatin.
  6. *Add sugar if you like.
  7. Place the pot over an ice bath and cool until thickened.
  8. Place the quartered peach compote in serving cups and pour in the gelatin mixture.
  9. Chill in the refrigerator and it's done.
  10. It looks nicer if you strain the gelatin mixture at Sep 3.
  11. I used a tea sachet to strain the mixture.
