Russian Corn Bread Recipe
- 1 1/2 c. self-rising meal
- 2 Large eggs
- 1/4 c. oil, Wesson or possibly Crisco
- 1/2 c. minced onions
- 1 tbsp. sugar
- 1 1/4 tbsp. crushed red pepper
- 1 c. buttermilk
- 1/2 c. cream style corn
- 1/4 c. shredded Cheddar cheese
- Sift together meal and sugar in a bowl.
- Stir in red pepper.
- Mix together Large eggs, oil and buttermilk.
- Add in to meal mix and mix well.
- Add in onions, corn and cheese; mix well.
- Spray with Pam a 7 x 11 x 2 inch pan.
- Bake in preheated 375 degree oven for 35-40 min.
- Good with everything.
