Bakery Style Cookies
- 8 ounces margarine
- 1 cup sugar
- 1 egg (minus shell of course)
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 14 cups matzo cake meal
- 34 cup potato starch
- Preheat oven to 350 degrees.
- Line cookie sheets with parchment paper for easy cleanup.
- Sift cakemeal and potato starch together.
- Cream margarine, sugar and vanilla till light and fluffy.
- Add egg and yolk.
- Mix well.
- Add the dry ingredients to the margarine/sugar mixture and mix thoroughly.
- At this point you may chill dough if you need to.
- Put dough into a cookie press fitted with your favorite shape.
- Press onto parchment paper, decorate if you wish and bake for 25-30 minutes or till lightly golden brown at the edges.
- Remove baked cookies to a wire rack to cool.
- Watch them disappear!
