Bakery Style Cookies

  1. Preheat oven to 350 degrees.
  2. Line cookie sheets with parchment paper for easy cleanup.
  3. Sift cakemeal and potato starch together.
  4. Cream margarine, sugar and vanilla till light and fluffy.
  5. Add egg and yolk.
  6. Mix well.
  7. Add the dry ingredients to the margarine/sugar mixture and mix thoroughly.
  8. At this point you may chill dough if you need to.
  9. Put dough into a cookie press fitted with your favorite shape.
  10. Press onto parchment paper, decorate if you wish and bake for 25-30 minutes or till lightly golden brown at the edges.
  11. Remove baked cookies to a wire rack to cool.
  12. Watch them disappear!
