Oatmeal-Cranberry Cookies

  1. Heat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  2. In a bowl, whisk flour, baking soda, cinnamon, and salt.
  3. In a large bowl, beat butter and brown sugar until fluffy.
  4. Beat in egg and vanilla.
  5. Beat in flour mixture; stir in oats, cranberries, walnuts, and coconut.
  6. Drop dough by 1/4 cupfuls 3 inches apart onto prepared baking sheets.
  7. Press each into a 2 1/2-inch circle.
  8. Bake 12 to 14 minutes, or until lightly browned.
  9. Let stand 2 minutes on baking sheets before removing to wire rack to cool completely.
