Peanut Brittle - Microwave Peanut Brittle
- 1 cup (225 ml) light corn syrup
- 2 cups (475 ml) white sugar
- 2/3 cup (150 ml) peanuts
- 2 tbsp (30 ml) butter
- 2 tsp (10 ml) vanilla
- 2 tsp (10 ml) baking soda
- In a 3 quarts (2850 ml) casserole dish (not metal), combine syrup, sugar, and peanuts.
- Microwave on high for 12 minutes.
- Stir in butter and vanilla.
- Cook on high for 4 minutes.
- Stir in baking soda.
- Pour onto buttered cookie sheet; cool and break into pieces.
