Spanakopita(Spinach Pita)
- 1 lb. fillo dough or struedel sheets, thawed
- 2 (10 oz.) pkg. frozen spinach, thawed, drained and squeezed dry
- 1 large onion, chopped
- 1 stalk leek, chopped
- 6 eggs, beaten
- 1/4 tsp. pepper
- 2 tsp. baking powder
- 1/2 lb. Feta cheese, crumbled
- 2 Tbsp. cottage cheese
- 1/4 c. melted butter
- 1/4 c. olive oil
- 1 stick butter, melted
- Beat eggs; add spinach, onion, leeks, pepper, baking powder, cheeses and 1/4 cup butter and olive oil.
- Mix with a tablespoon. Brush a 13 x 9-inch baking pan with melted butter.
- Layer with 6 sheets of dough, brushing butter between sheets.
- Start spreading 1/2 cup mixture and alternate with one sheet; cover.
- Spread mixture evenly.
- Do this until you use all of mixture.
- Then use 6 sheets to cover top, brushing each sheet with melted butter.
- Bake at 350u0b0 for 45 minutes or until lightly browned.
- Cool for 10 minutes.
- Cut in squares and serve.
- Can be frozen.
