Toasted Cumin Rub

  1. In a medium skillet over medium-high heat, toast the cumin, mustard, and coriander seeds until fragrant, 2 to 3 minutes, shaking the pan occasionally to prevent scorching.
  2. Transfer the seeds to a spice mill, add the remaining ingredients, and pulse until finely ground.
