Crunchy Couscous

  1. Combine broth, onions, apricots and oil in medium saucepan.
  2. Bring to boil on medium-high heat.
  3. Stir in couscous; cover.
  4. Remove from heat; let stand 5 min.
  5. Fluff couscous with fork.
  6. Add almonds and mint; mix lightly.
