Crunchy Couscous
- 1 can (14-1/2 oz.) vegetable broth
- 1 medium red onion, chopped
- 1/2 cup sliced dried apricots
- 1 Tbsp. olive oil
- 1 pkg. (10 oz.) couscous
- 1 pkg. (2.25 oz.) PLANTERS Sliced Almonds, toasted
- 2 Tbsp. chopped fresh mint leaves
- Combine broth, onions, apricots and oil in medium saucepan.
- Bring to boil on medium-high heat.
- Stir in couscous; cover.
- Remove from heat; let stand 5 min.
- Fluff couscous with fork.
- Add almonds and mint; mix lightly.
