Lemon/Almond Cookies
- 2 tablespoons lemon peel
- 1 tablespoon ginger
- 1 teaspoon cinnamon
- 1 cup brown sugar
- 1 lemon, juice of
- 1 cup butter
- 12 cup molasses
- 14 cup crystallized ginger
- 1 cup almonds, chopped
- 3 12 cups flour
- 1 teaspoon baking soda
- Blend all ingredients together well,.
- Divide into two parts.
- Make a square shape and chill for 1 hour.
- Roll to 1/4 inch thickness, and cut rectangular shapes and place on parchment lined baking sheet.
- Bake at 350F for 8-10 minutes.
