Peanut Prawn Curry - Gluten Free
- 1/2 red onion, cut into wedges
- 2 tablespoons gluten free green curry paste
- 1/3 cup KRAFT Smooth Peanut Butter
- 1 1/2 cups gluten free vegetable stock
- 100g trimmed choy sum (chinese broccoli)
- 80g whole shitake mushrooms
- 12 green prawns, shells and heads removed Safeway 1 lb For $8.99 thru 02/09
- 300g block firm tofu, cubed
- 1 cup coconut cream
- Stir-fry onion until tender in a little oil.
- Add curry paste, cook 2 minutes.
- Add peanut butter and stock, stir until smooth.
- Add choy sum, mushrooms, prawns, tofu and coconut cream, cook 2 minutes.
