Eggroll Filling
- 13 pound ground pork
- 3 tablespoons soy sauce, tamari
- 4 each scallions, spring or green onions finely chopped
- 2 pints oysters shucked
- 2 tablespoons lemon juice
- 1 tablespoon sherry
- 1 tablespoon vegetable oil
- 1 each onions chopped
- 8 each mushrooms chopped
- 1 each sweet red bell peppers diced
- 1 tablespoon pineapple crushed
- 1/2 teaspoon sesame oil
- In food processor combine pork, soy, scallions oysters, lemon juice and sherry.
- Heat vegtablbe oil in wok or fry pan.
- Add pork mixture, onions, mushrooms, pepper, red pepper, stir fry 1 to 2 min, add pineapple and reserved liquid.
- Continue cooking 1 min.
- Drizzle on sesame oil.
- Cool and make egg rolls
