General Tso Fried Chicken
- 1 whole chicken, broken down into 8 pieces
- vegetable oil, for frying
- 1 quart buttermilk
- 1 teaspoon Chinese 5 spice, toasted and ground
- 1 teaspoon cumin, toasted
- 1 teaspoon Szechuan peppercorns, toasted
- 1/4 cup Sriracha
- 1 cup dehydrated mushroom powder
- 2 cups all purpose flour
- 1 teaspoon Chinese 5 spice, toasted and ground
- 1 teaspoon cumin, toasted and ground
- 1 teaspoon Szechuan peppercorns, toasted and ground
- 1/8 cup dehydrated mushroom powder
- 1 cup honey
- 1/4 cup garlic, finely chopped
- 1/4 cup ginger, finely chopped
- 1/2 bunch cilantro, finely chopped
- 1 cup Sriracha
- 1/8 cup fermented shoyu
- 4 tablespoons dehydrated mushroom powder
- 1/2 cup Chinese fermented dried black beans
- 1/2 cup scallions, sliced
- 1/2 cup leeks, pickled (see below)
- 1 large leek, just the white part, thinly sliced
- 1 cup rice vinegar
- 1 cup sugar
- 1 cup ice water
- Whisk all ingredients together until combined.
- To toast spices, place on a baking sheet in a 300F oven for about 10 minutes, or until you start to smell them.
- Spices can then be ground in a spice or coffee grinder.
- (Note: If you cannot find mushroom powder, use salt to taste.)
