Corn Meat Loaf

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion and celery, saute 5 minutes or until tender and lightly browned.
  3. Add basil and the next 5 ingredients (basil through garlic) and cook 2 minutes.
  4. Remove from the heat, stir in vinegar.
  5. Combine onion mixture, meat, breadcrumbs, 1/2 cup corn, and parsley in a large bowl, set aside.
  6. Place the remaining corn and egg in a food processor.
  7. Process until almost smooth.
  8. Add to meat mixture, stir well (mixture will be wet).
  9. Shape meat mixture into a 9x4 inch loaf.
  10. Place meat loaf on a broiler pan coated with cooking spray.
  11. Bake at 350F (180C) F for 30 minutes.
  12. Brush tomato sauce over meat loaf; bake an additional 35 minutes.
  13. Let stand 5 minutes before slicing.
