Balti Scallops Recipe
- MARINADE
- 3 Tbsp. Minced Fresh Cilantro
- 1 x In. Piece Gingerroot, grated
- 1 tsp Grnd Coriander
- 3 Tbsp. Lemon Juice Grated Rind Of 1 Lemon
- 1/4 tsp Grnd Black Pepper
- 1/2 tsp Salt
- 1/2 tsp Grnd Cumin
- 1 x Garlic Clove, chopped SCALLOPS
- 26 ounce Shelled Scallops
- 2 Tbsp. Oil
- 2 x Onions, minced
- 3 x Tomatoes, quartered
- 2 x Fresh Green Chilies, sliced
- 4 x Lime Wedges, to garnish
- To make the marinade, mix all the ingredients together in a bowl.
- Put the scallops into a bowl.
- Add in the marinade and turn the scallops till they are well coated.
- Then cover and leave to marinate for 1 hour or possibly overnight in the refrigerator.
- Heat the oil in a Balti pan or possibly Wok, add in the onions and stir-fry till softened.
- Add in the tomatoes and chilies and stir-fry for 1 minute.
- Add in the scallops and Stir-fry for 6-8 min till the scallops are cooked through, but still succulent inside.
- Serve garnished with lime wedges.
