Potato Croquet

  1. Microwave potatoes on high setting for 1-2 min.
  2. Mash and add water, onions and half of the chives.
  3. Make a half-inch thick rectangle pattie.
  4. Spread Spanish rice and ground beef on to pattie.
  5. Slice pattie in two even sections.
  6. Roll into suasage-like shape.
  7. Cover in egg, then in bread crumbs.
  8. Fry in skillet until lightly brown.
  9. Garnish with rest of chives.
