Pecan Pilaf

  1. Melt 1-1/2 T butter in a large skillet over medium heat.
  2. Add pecans; saute' 8.minutes or until lightly browned.
  3. Remove pecans from skillet.
  4. Melt remaining 2-1/2 T butter in skillet over medium heat; add onion, and cook.
  5. until tender, stirring occasionally.
  6. Stir in rice and remaining ingredients.
  7. Bring mixture to a boil; cover, reduce heat and simmer 20 minutes until liquid is absorbed and rice is tender.
  8. Remove from heat; stir in pecans.
