Pecan Pilaf
- 14 cup butter, divided
- 12 cup chopped pecans
- 14 cup chopped onion
- 1 cup uncooked long-grain rice
- 2 cups chicken broth
- 12 teaspoon salt
- 18 teaspoon dried thyme
- 18 teaspoon pepper
- Melt 1-1/2 T butter in a large skillet over medium heat.
- Add pecans; saute' 8.minutes or until lightly browned.
- Remove pecans from skillet.
- Melt remaining 2-1/2 T butter in skillet over medium heat; add onion, and cook.
- until tender, stirring occasionally.
- Stir in rice and remaining ingredients.
- Bring mixture to a boil; cover, reduce heat and simmer 20 minutes until liquid is absorbed and rice is tender.
- Remove from heat; stir in pecans.
