Rako's Potato Leek Soup
- 20 g butter
- 8 cups water
- 2 vegetable bouillon cubes
- 600 g red potatoes, sliced thin
- 200 g leeks, sliced thin
- Slice potatoes and leeks.
- Add the potatoes to the pressure cooker, with the bouillon and water.
- process on high for 10 minutes.
- Saute the leeks in the butter.
- Add the leeks to the pressure cooker.
- Use the immersion blender.
- Optional: top with garlic croutons & minced chives or scallions.
