Kielbasa Hash

  1. Preheat oven to 425 degrees F.
  2. Roast potatoes for 20 minutes, or until soft.
  3. While potatoes roast, saute onion and pepper in a large skillet.
  4. Add garlic and Italian seasoning to the pan.
  5. Cook until fragrant.
  6. Add kielbasa and potatoes, cooking until the kielbasa is heated through.
  7. Salt and pepper to taste.
  8. Serve topped with grated Parmesan.
  9. Enjoy!
