Breakfast Potato Pie Recipe
- 1 pkg. hash brown potatoes
- 5 Large eggs
- 1/2 c. cottage cheese
- 1 c. shredded Swiss cheese
- 1 green onion, minced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 6 slices bacon, cooked and cut
- Mix above.
- Pour into a well greased 10 inch pie pan.
- Sprinkle with bacon and paprika.
- Cover and chill 8 hrs.
- Place cool pie, uncovered, in cool oven.
- Bake at 350 degrees for 35 min.
- Makes 6-8 servings.
