Spicy Lemon Chicken
- 1 lb boneless skinless chicken breast
- 1 lemon, zest and juice
- 2 tablespoons light soy sauce
- 1 teaspoon ground coriander
- 23 cup tomato sauce
- 1 red chili pepper, deseeded and finely chopped
- 1 teaspoon lemongrass, finely chopped
- 2 garlic cloves, crushed
- salt & freshly ground black pepper
- 1 tablespoon cilantro, chopped
- Using a sharp knife, cut the chicken breast into dice and place in a shallow dish.
- Season with salt and pepper.
- Combine the remaining ingredients, except the cilantro, and pour over the chicken.
- Leave to marinate for at least an hour, mixing occasionally.
- Strain away the marinade from the chicken and reserve.
- Preheat a non-stick wok or frying pan and dry-fry the chicken over a high heat for 5-6 minutes, turning it to seal all sides.
- Add the reserved marinade and continue to cook for a further 10 minutes to allow the sauce to simmer gently and thicken.
- Stir in the fresh cilantro and serve.
