Warm Potato, Italian Sausage and Rocket Salad

  1. Gently bring potatoes to boil in a large saucepan of water and simmer until tender; drain.
  2. Cook sausages in a non-stick frying pan over medium heat for 8-10 minutes or until cooked through.
  3. Cool slightly then thickly slice on the diagonal.
  4. When potatoes are cool enough to handle cut in half and gently toss with sausage, onion, roasted capsicum and rocket.
  5. Arrange onto serving plates or large platter, drizzle with dressing and serve immediately.
