Warm Potato, Italian Sausage and Rocket Salad
- 600g baby chat potatoes
- 500g Italian sausages
- 1/2 red onion, thinly sliced
- 2 roasted red capsicum fillets, cut into thick strips
- 100g rocket leaves
- 1/2 cup KRAFT Italian Dressing
- Gently bring potatoes to boil in a large saucepan of water and simmer until tender; drain.
- Cook sausages in a non-stick frying pan over medium heat for 8-10 minutes or until cooked through.
- Cool slightly then thickly slice on the diagonal.
- When potatoes are cool enough to handle cut in half and gently toss with sausage, onion, roasted capsicum and rocket.
- Arrange onto serving plates or large platter, drizzle with dressing and serve immediately.
