Warm Coconut Tapioca with Mixed Fruit

  1. Bring first 4 ingredients to boil in medium saucepan on medium heat, stirring constantly; simmer on low heat 10 min.
  2. Beat egg and vanilla in small bowl until well blended.
  3. Stir small amount of hot tapioca mixture into egg mixture.
  4. Gradually return to ingredients in saucepan, stirring constantly.
  5. Cook on low heat 5 min.
  6. or until thickened, stirring constantly.
  7. Stir in fruit and coconut.
  8. Serve warm.
