Warm Coconut Tapioca with Mixed Fruit
- 1 can (14 oz.) lite coconut milk
- 1 cup 2% milk
- 1/3 cup MINUTE Tapioca
- 1/3 cup packed brown sugar
- 1 egg
- 1/2 tsp. vanilla
- 2 cups fresh fruit (raspberries, blueberries, chopped strawberries) Whole Foods 5 ea For $5.00 thru 02/09
- 1/4 cup BAKER'S ANGEL FLAKE Coconut, toasted
- Bring first 4 ingredients to boil in medium saucepan on medium heat, stirring constantly; simmer on low heat 10 min.
- Beat egg and vanilla in small bowl until well blended.
- Stir small amount of hot tapioca mixture into egg mixture.
- Gradually return to ingredients in saucepan, stirring constantly.
- Cook on low heat 5 min.

- Stir in fruit and coconut.
- Serve warm.
