Spicy Corn Fritters(Khao Pode Thord)
- 2 tablespoons cilantro roots, and stems chopped
- 4 garlic cloves
- 12 teaspoon black pepper
- 23 cup water
- 12 cup rice flour
- 12 cup all-purpose flour
- 1 12 teaspoons sugar
- 34 teaspoon baking powder
- 12 teaspoon salt
- 1 (8 ounce) can whole kernel corn, drained
- 1 12 cups vegetable oil
- Make sweet and sour Red Chilie sauce.
- Place cilantro, garlic and pepper in a mortar; pound to a paste.
- Blend paste with water in a small bowl.
- In a meidum size bowl, comgine the rice flour and all purpose flour, sugar, baking powder and salt.
- Stir in corn.
- Blend in cilatro water mixture.
- Heat oil in wok to 375 degrees or until a 1 inch bread cube turns golden brown in 50 seconds.
- Drop mixture by tablespoons into oil.
- Fry until golden brown on each side, turning as needed.
- Drain on paper towels.
- Keep warm until ready to serve.
