Poached Leeks In Sauce Verte Recipe
- 2 Large eggs
- 1 egg yolk
- 1 tbsp. Dijon mustard
- 2 teaspoon white wine vinegar
- 3/4 to 1 c. peanut oil
- 1/2 c. watercress leaves, blanched, liquid removed and minced
- 2-4 tbsp. finely chopped fresh parsley (preferably Italian)
- 2-3 tbsp. cooked, liquid removed and squeezed and minced spinach
- 2-3 tbsp. finely chopped fresh dill
- 2-3 tbsp. finely chopped fresh chives
- Salt and freshly grnd white pepper
- 12 leeks
- 12 slices ham (preferably smoked)
- Cherry tomatoes and parsley sprigs for garnish
- Serve with thinly sliced black bread and a bowl of unsalted butter.
- Yield: 6 servings.
