Lisas Prime Rib for Dummies

  1. -Trim off some of the fat on the roast if necessary.
  2. Rub roast with equal parts of salt, pepper, and garlic powder; let stand at room temperature for 30 mins.
  3. Place the roast in a shallow roasting pan, fat side up, and do not cover.
  4. Roast for 1 hour at 375 degrees (F).
  5. Turn off oven, but leave the roast in until about 45 minutes before dinner.
  6. (Leave off for AT LEAST 1.5 hours, with the roast in the oven the whole time... but you can leave longer... we had a power outage once at this point for 2.5 hours and it was still GREAT).
  7. While waiting, mix the au jus with water as directed on the package.
  8. At about 45 minutes before youre ready to serve it, quickly poor the au jus over the roast and turn the oven back to 375 degrees (F) for an additional 45 minutes.
  9. Do not open the oven door until youre ready to eat.
  10. The roast will be perfectly browned on the outside and medium to medium rare on the inside, regardless of the size of the roast.
  11. I like to also strain the au jus and roast juices to serve on the side, mixed with horseradish.
