Tuna Patties
- 200 grams of canned tuna
- 2 piece spring onions, chopped
- 2 garlic cloves, minced
- 1 tbsp chopped fresh parsley
- 1 tbsp fresh lemon juice
- 2 tbsp cornmeal
- 6 tbsp ap flour
- 1 egg
- 1 tbsp mayonnaise
- 1 salt and pepper to taste, i use 1 teaspoon for each
- Before using the tuna, leave it for 5 mins in a strainer.
- Then in a bowl mix the tuna with the onion, garlic, lemon juice, parsley, salt and pepper.
- Next add the cornmeal, flour, egg and mayo and mix well.
- Heat the oil and drop spoonfuls of the tuna mix.
- Let the patties cook until golden brown.
- Enjoy!
