Poor Mans Ribs: Roasted BBQ Pork Necks

  2. In a small bowl, combine the mustard and seasonings to create a flavor paste.
  3. Rub the pork necks with the mixture and put the pork in a dish.
  4. Cover and refrigerate for at least 4 hours.

  6. Preheat the oven to 350 F. 3.
  7. Prepare a baking sheet with a lip with a wire rack sitting inside of it.
  8. Place the meat on the wire rack in a single layer.
  9. Pour the water into the bottom of the pan.
  10. Tightly cover the pan with aluminum foil.
  11. 4.
  12. Carefully place it in the oven and cook for 2 1/2 hours.
  13. 5.
  14. After 2 1/2 hours, remove from the oven, uncover, and brush with BBQ sauce.
  15. 6.
  16. Return to the oven for an additional 30 minutes, uncovered.
  17. 7.
  18. Carefully remove the pan from the oven and serve as you would serve ribs.
