Middle East Lentils And Rice Recipe
- 1 lg. onion, thinly sliced
- 1/2 c. corn oil
- 1 c. lentils
- 3 1/2 c. boiling water
- 1/2 teaspoon salt
- 1/2 c. long-grain brown rice
- Saute/fry onion in oil till well browned.
- Add in lentils, water, salt, and rice to onions.
- Cover and simmer without stirring till lentils and rice care tender, about 40 min.
- Serves 4.
