Toasted turkey tacos

  1. Chop lettuce, cilantro, avocado and tomatoes and combine.
  2. Salt to taste then set aside.
  3. In a medium frying pan heat oil over medium heat.
  4. Set oven at 400F.
  5. In separate pan, fry bacon until extra crispy.
  6. Set on paper towel to dry and become brittle.
  7. Fry turkey cutlets until light brown and only 2/3's fully cooked, about 3 minutes.
  8. Set aside on paper towel until all cutlets are cooked.
  9. place cutlets in preheated oven till fully cooked and have a crispy, outer crust.
  10. Place tortillas in the oven for about 1 minute to soften.
  11. Crumble bacon and mix with ranch dressing.
  12. Cut turkey cutlets into strips and build tacos, saving the bacon-ranch as topping.
  13. Pound out the turkey cutlets to about 1/8 inch.
  14. Drag through flour, dip in egg wash, then coat with panko crumbs.
  15. Set aside and refrigerate.
