Chunky Cherry Pecan Ice Cream

  1. Combine pecans, 1/4 cup sugar and butter in heavy saucepan or skillet.
  2. Cook, stirring constantly, over medium heat 4-5 minutes or until sugar turns golden.
  3. Pour onto heavy-duty aluminum foil.
  4. Cool completely.
  5. Break into pieces.
  6. Combine all ice cream ingredients except cherries in bowl; stir until sugar dissolves.
  7. Stir in pecans and cherries.
  8. Pour into ice cream freezer.
  9. Freeze according to manufacturers directions.
  10. *Substitute 1 (16 1/2-ounce) can sour cherries, drained, chopped.
