Diabetic Peanut Butter And Jelly Muffins Recipe
- 3/4 c. all purpose flour
- 3/4 c. whole wheat flour
- 1 1/2 teaspoon baking pwdr
- 1/2 teaspoon soda
- 1/2 teaspoon grnd cinnamon
- 1/4 c. plus 3 tbsp. peanut butter
- 12 teaspoon jam, sweetened with its own juice
- 1 c. skim lowfat milk
- Sugar substitute equivalent to 12 teaspoon sugar
- 1 teaspoon vanilla
- 1 egg
- 1 teaspoon vegetable oil
- In large bowl, combine both types of flour, baking pwdr, soda, cinnamon and mix well.
- In another bowl, combine remaining ingredients except the jam.
- Beat with a fork or possibly whisk till blended.
- Divide half the batter into 8 muffin c. which have been sprayed with a non stick cooking spray.
- Place 1 tsp.
- jam in center of each muffin.
- Top with remaining batter.
- Bake 15 to 18 min till lightly browned.
- Remove muffins from rack to cold.
