Lemon Herb Game Hens

  2. Preheat oven to 375 F. Place game hens in a 9x13 glass baking dish.

  4. Take one quarter of lemon and rub it all over the skin of one chicken.
  5. Once done, place half of the lemon inside the chicken cavity.
  6. Repeat for the other chicken and the rest of the lemon.
  7. Take one half of a garlic clove and rub it all over one of the chicken.
  8. Once finished, place 6 halves of garlic inside the chicken cavity.
  9. Repeat with other chicken and the rest of the garlic.

  11. Drizzle half of the oil over each chicken.
  12. Rub it into the chicken skin.
  13. Sprinkle half of the garlic powder and onion powder over each chicken, making sure you coat it evenly.
  14. 4.
  15. Sprinkle 1/4 of the basil of top of each chicken.
  16. Place 1/4 of the basil inside of each chicken cavity).
  17. 5.
  18. Sprinkle half of the rosemary and thyme over top of the chickens.
  19. Place the rest of the herbs inside chicken cavities.
  20. Place dish in the oven and baste with 1/2 cup chicken broth every 20 minutes.
  21. Cook until temperature reaches 165 F which should take about 1 hour and 15 minutes.
