Lemon Herb Game Hens
- 1 whole Lemon, Quartered
- 2 whole Cornish Game Hens
- 6 cloves Garlic, Halved
- 4 Tablespoons Olive Oil
- 2 Tablespoons Garlic Powder
- 2 Tablespoons Onion Powder
- 1 cup Fresh Basil, Roughly Chopped
- 3 sprigs Fresh Rosemary, Leaves Removed And Roughly Chopped
- 6 sprigs Thyme, Leaves Removed
- 2 cups Chicken Broth
- 1.
- Preheat oven to 375 F. Place game hens in a 9x13 glass baking dish.
- 2.
- Take one quarter of lemon and rub it all over the skin of one chicken.
- Once done, place half of the lemon inside the chicken cavity.
- Repeat for the other chicken and the rest of the lemon.
- Take one half of a garlic clove and rub it all over one of the chicken.
- Once finished, place 6 halves of garlic inside the chicken cavity.
- Repeat with other chicken and the rest of the garlic.

- Drizzle half of the oil over each chicken.
- Rub it into the chicken skin.
- Sprinkle half of the garlic powder and onion powder over each chicken, making sure you coat it evenly.

- Sprinkle 1/4 of the basil of top of each chicken.
- Place 1/4 of the basil inside of each chicken cavity).
- 5.
- Sprinkle half of the rosemary and thyme over top of the chickens.
- Place the rest of the herbs inside chicken cavities.
- Place dish in the oven and baste with 1/2 cup chicken broth every 20 minutes.
- Cook until temperature reaches 165 F which should take about 1 hour and 15 minutes.
