Cinnamon Walnut Coffee Cake
- 2 1/4 c. flour
- 1/2 tsp. salt
- 2 tsp. cinnamon, divided
- 1/4 tsp. ginger or allspice
- 1 c. brown sugar
- 3/4 c. sugar
- 3/4 c. corn oil
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 egg, beaten
- 1 c. buttermilk
- 1 c. chopped walnuts
- Use greased 9 x 13-inch pan.
- Preheat oven to 350u0b0.
- Mix first 7 ingredients, using only 1 teaspoon of cinnamon.
- Remove 1/4 of this mixture and add chopped walnuts.
- Set aside for topping and add 1 teaspoon cinnamon.
- Add last 4 ingredients to remaining 3/4 of mixture.
- Mix well.
- (Small lumps are okay.)
- Pour this mixture into pan.
- Sprinkle topping over batter in pan.
- Bake at 350u0b0 for 33 to 35 minutes.
- Topping will be light brown.
- Great for breakfast, brunch or dessert.
