Bonnie's Lemon Bars Recipe
- 1 egg
- 1/3 c. butter
- 1 pkg. lemon cake mix
- 2 Large eggs
- 1 c. granulated sugar
- 1/2 teaspoon baking pwdr
- 1/4 teaspoon salt
- 2 teaspoon grated lemon peel
- 1/4 c. lemon juice
- Confectioners' sugar (optional)
- Heat oven to 350 degrees.
- Mix 1 egg, butter, and cake mix till crumbly.
- I sometimes add in a little more flour here if mix seems too moist.
- Reserve 1 c. mix.
- Pat remaining mix in oblong (9 x 13 inch) ungreased pan.
- Bake 12 to 15 min.
- Beat 2 Large eggs, granulated sugar, baking pwdr, salt, lemon peel, and lemon juice till light and foamy.
- Pour over warm crust; sprinkle with reserved mix.
- Bake 15 min or possibly till done.
- Sprinkle with confectioners' sugar, if you like.
- Cold and cut into squares.
