Macaroni & Cheese with Garlic Shrimp
- 2 cups elbow macaroni, uncooked
- 1/4 cup olive oil, divided
- 1/4 cup finely chopped onions Safeway 1 lb For $1.49 thru 02/09
- 3 cloves garlic, minced
- 1 lb. uncooked deveined peeled large shrimp Safeway 1 lb For $8.99 thru 02/09
- 1/4 cup flour
- 2 cups milk
- 1-3/4 cups KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided
- 1/3 cup KRAFT Grated Parmesan Cheese, divided
- Heat oven to 350 degrees F.
- Cook macaroni as directed on package, omitting salt.
- Meanwhile, heat 1 Tbsp.
- oil in large skillet on medium heat.
- Add onions and garlic; cook and stir 5 min.
- or until crisp-tender.
- Add shrimp; cook and stir 3 to 4 min.
- or until shrimp turn pink.
- Remove shrimp mixture from skillet; set aside.
- Add remaining oil to skillet.
- Whisk in flour; cook and stir 1 min.
- Gradually whisk in milk; cook and stir 3 to 5 min.
- or until thickened.
- Add 1-1/4 cups shredded cheese and 1/4 cup Parmesan; cook and stir 1 to 2 min.
- or until shredded cheese is melted.
- Drain macaroni.
- Add to cheese sauce along with the shrimp mixture; mix well.
- Spoon into 9-inch square baking dish sprayed with cooking spray; top with remaining cheeses.
- Bake 20 min.
- or until heated through.
