Macaroni & Cheese with Garlic Shrimp

  1. Heat oven to 350 degrees F.
  2. Cook macaroni as directed on package, omitting salt.
  3. Meanwhile, heat 1 Tbsp.
  4. oil in large skillet on medium heat.
  5. Add onions and garlic; cook and stir 5 min.
  6. or until crisp-tender.
  7. Add shrimp; cook and stir 3 to 4 min.
  8. or until shrimp turn pink.
  9. Remove shrimp mixture from skillet; set aside.
  10. Add remaining oil to skillet.
  11. Whisk in flour; cook and stir 1 min.
  12. Gradually whisk in milk; cook and stir 3 to 5 min.
  13. or until thickened.
  14. Add 1-1/4 cups shredded cheese and 1/4 cup Parmesan; cook and stir 1 to 2 min.
  15. or until shredded cheese is melted.
  16. Drain macaroni.
  17. Add to cheese sauce along with the shrimp mixture; mix well.
  18. Spoon into 9-inch square baking dish sprayed with cooking spray; top with remaining cheeses.
  19. Bake 20 min.
  20. or until heated through.
