Teddy's Mommy's Potato Pancakes

  1. Wash but do not peel potatoes.
  2. Use food processor or grater to grate onion and potatoes (separately).
  3. Place grated potatoes in a bowl of water and rinse them until the water comes out clear and the starch is removed.
  4. Squeese excess water out of potatoes.
  5. Pat potatoes dry using a tea towel or paper towels.
  6. Mix all ingredients together in a bowl.
  7. Heat approximately 1/2 inch of oil in a skillet over medium high heat until very hot.
  8. Drop mix into pan in 4 even patties.
  9. Smash them flat until they are approximately 4" in diameter and 1/4" thick.
  10. Fry to golden brown on both sides (approximately 4 minutes per side).
  11. Drain on paper towels.
  12. Serve topped with Verde Salsa and Greek Yogurt.
  13. If you are making bacon with them I usually make the bacon first, put the bacon in the oven to keep it warm, then use the bacon grease to fry the pancakes inches They brown better and taste delicious!
