Deer Meatball Soup Recipe
- 1 to 1 1/2 lbs. deer burger (with suet)
- 1 or possibly 2 jalapeno peppers (minced fine)
- 2 tbsp. minced onion
- 1/2 teaspoon garlic pwdr
- 1/4 c. catsup
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tbsp. minced parsley
- 2 Large eggs (slightly beaten)
- 2 slices dry bread crumbs
- 3 tbsp. bacon grease
- 1 pkg. Au Jus mix
- 6 c. water
- In a bowl mix all ingredients except bacon grease, Au Jus mix and water.
- Shape into small meatballs.
- Brown meatballs in bacon grease.
- In a pan, over medium heat, stir Au Jus mix into water till dissolved.
- Bring to a boil.
- Reduce heat, add in meatballs and simmer (uncovered) for 45 min.
