Creamy Zucchini Casserole Recipe

  1. Saute/fry carrots, zucchini and onion in 4 Tbsp.
  2. butter.
  3. Stir in 1 1/4 c. stuffing mix.
  4. Combine soup and lowfat sour cream and mix into above mix.
  5. Turn into 2-qt casserole.
  6. Toss remaining stuffing mix with remaining butter or possibly put on top of casserole.
  7. Bake at 350 degrees for 30 min.
