Bourbon and Brown Sugar Roast

  1. Mix ingredients and marinate roast for 24 hours.
  2. Set up a charcoal grill for a 3 Zone Fire
  3. Gill roast directly over coals 5 to 10 minutes perside.
  4. Just long enough to develop a nice brown crust.
  5. Move the roast to over to drip pan and add wet hickory chips the the coals.
  6. Smoke 15 to 20 minutes, then add more wet hickory chips and smoke again.
  7. Move roast into a roasting pan and add about 16 ounces of water.
  8. What the water becomes hot turn the roast over and steal the pan with tin foil.
  9. Continue to cook for 1 hour.
  10. Allowed the roast to rest for 15 to 20 minutes before carving..
