Bourbon and Brown Sugar Roast
- 3 lb roast
- 1/2 cup bourbon
- 1/2 cup Brown sugar
- 1/2 cup Soy sauce
- 1 tbsp Lemon juice
- 1 tbsp worcestershire sauce
- 1 tsp Garlic powder
- 1 tsp Onion powder
- Mix ingredients and marinate roast for 24 hours.
- Set up a charcoal grill for a 3 Zone Fire
- Gill roast directly over coals 5 to 10 minutes perside.
- Just long enough to develop a nice brown crust.
- Move the roast to over to drip pan and add wet hickory chips the the coals.
- Smoke 15 to 20 minutes, then add more wet hickory chips and smoke again.
- Move roast into a roasting pan and add about 16 ounces of water.
- What the water becomes hot turn the roast over and steal the pan with tin foil.
- Continue to cook for 1 hour.
- Allowed the roast to rest for 15 to 20 minutes before carving..
